Soft, delicious zucchini bread is SO good and really easy, too! This is the best zucchini bread I’ve made and I needed to share it with you because we all deserve a slice of this yummy bread. Cake? Bread? I guess it’s more of a cake, really. But whatever you want to call it, it’s worth making! So go grab some zucchinis and get in the kitchen to whip this up. You’ll be so glad you did! Enjoy. 🙂
Best Choco-Zucchini Bread

2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp sea salt
1 cup brown sugar, packed
1/2 cup granulated sugar
3/4 cup vegetable oil
1 tsp real vanilla extract
2 large eggs
3 cups grated zucchini, pressed with towel to remove excess moisture
1/2 cup dark chocolate chips
Directions
- Preheat oven to 350 degrees. Grease 9X5 loaf pan with butter or cooking spray, set aside.
- In a large bowl, mix together all the ingredients except the zucchini and chocolate chips. Stir until combined.
- Add zucchini and mix again, then finally add the chocolate chips and stir until just combined.
- Pour batter into prepared pan and sprinkle with additional chocolate chips (add decorative slice of zucchini, optional)
and tent with a sheet of tinfoil. Bake in oven for about 45 minutes, then remove tinfoil and continue baking until toothpick inserted near centre comes out clean. - Cool on wire rack and serve. Enjoy!
