Recipe tested this with the kids a couple days ago and we thought it turned out great! It’s filling, nourishing and a perfect way to start your day off right. My oldest even loved it! 😀 It’s really simple so you can’t even mess it up, just throw everything in the dish and bake. You can even use whatever fruit you have, sliced apples or even bananas would work. Enjoy!
Berry Oatmeal Bake

2 1/2 cups quick oats
1 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup brown sugar, reserve a couple tablespoons for topping
2 cups buttermilk
3 eggs
1 Tbsp real vanilla extract
2 Tbsp honey or maple syrop
1/4 cup butter, melted
2 cups berries, fresh or frozen
Directions
- Preheat oven to 375 degrees and prepare a 9X13 baking dish with a layer of butter or non-stick spray, set aside
- In a medium bowl, mix together all the dry ingredients.
- In a separate bowl, combine the buttermilk, eggs, vanilla, honey and butter.
- Sprinkle half the berries along the bottom of the prepared dish, then pour the dry ingredients over, covering the bottom of the dish. Pour the wet mixture over everything and then sprinkle remaining berries on top. Lastly, sprinkle a little additional brown sugar over the berries and place pan in oven to bake for approx 45 minutes, until oats have absorbed all the wet mixture.
- Remove from oven and serve warm. Enjoy!
