This is one of my favorite things. It is everything I crave for breakfast… buttery croissants, cream cheese, and berries (berries are full of antioxidants so we can say this is healthy-ish, too!) I could eat this by myself but I try to have self control. Seriously, if you have leftovers it makes an amazing snack cold from the fridge. Basically, it is breakfast cheesecake. Haha!
Berry Croissant Skillet Bake
Ingredients
- 2 Tablespoons melted butter
- 5 croissants, cut into pieces
- 1 1/2 cups berries, fresh or frozen
- 1 (8 oz) package cream cheese
- 1/4 cup heavy cream
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup milk (approx)
Directions
- Preheat oven to 350 degrees. Coat your skillet with melted butter. (If not using a cast iron skillet you may use a 9 X 9 baking dish)
- Add the croissant chunks to the skillet and sprinkle the berries on top
- Beat the cream cheese in a stand mixer over medium speed using paddle attachment for about 30 seconds. Add the cream, sugar, eggs and vanilla slowly. Add milk as necessary until it has a smooth creamy texture. Pour mixture over croissants and berries.
- Let sit in refrigerator for about 20 minutes before baking.
- Bake 30-40 minutes, until golden brown and set in center.
- Serve warm with a sprinkle of powdered sugar. Enjoy!
