Berry Croissant Skillet Bake

This is one of my favorite things. It is everything I crave for breakfast… buttery croissants, cream cheese, and berries (berries are full of antioxidants so we can say this is healthy-ish, too!) I could eat this by myself but I try to have self control. Seriously, if you have leftovers it makes an amazing snack cold from the fridge. Basically, it is breakfast cheesecake. Haha!

Berry Croissant Skillet Bake

Ingredients

  • 2 Tablespoons melted butter
  • 5 croissants, cut into pieces
  • 1 1/2 cups berries, fresh or frozen
  • 1 (8 oz) package cream cheese
  • 1/4 cup heavy cream
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup milk (approx)

Directions

  1. Preheat oven to 350 degrees. Coat your skillet with melted butter. (If not using a cast iron skillet you may use a 9 X 9 baking dish)
  2. Add the croissant chunks to the skillet and sprinkle the berries on top
  3. Beat the cream cheese in a stand mixer over medium speed using paddle attachment for about 30 seconds. Add the cream, sugar, eggs and vanilla slowly. Add milk as necessary until it has a smooth creamy texture. Pour mixture over croissants and berries.
  4. Let sit in refrigerator for about 20 minutes before baking.
  5. Bake 30-40 minutes, until golden brown and set in center.
  6. Serve warm with a sprinkle of powdered sugar. Enjoy!
