Probably my favorite dinner right now. I am obsessed with basil pesto, I think it’s so summery and yummy and I love this dish because I do get bored of pasta. Gnocchi is a little different but still filling and oh so good with this combo of pesto, tomatoes and bacon. I can’t get enough of it. And I will add that this is probably my favorite thing to pack as leftovers for lunches because it is so good the next day, plus it is just so easy to pile into Tupperware. Not to mention, if you are expecting company, this is the IDEAL thing to throw together because it looks and tastes like it took a lot of work but really it is the easiest thing in the world. Enjoy 😉
Basil Pesto Gnocchi With Smoky Bacon & Feta

2 350g packages potato gnocchi
1/2 cup basil pesto sauce
2 cups cherry tomatoes, halved
6 slices apple wood smoked bacon
1/2 cup fresh basil leaves
kosher salt and fresh ground pepper
Directions
- Cook gnocchi in large pot of boiling water per package directions. Drain and set aside.
- In a skillet over med-high heat, add bacon and cook until crisp. Remove and place over paper towels. Add the cherry tomatoes to the bacon grease and cook until they are softened. Remove tomatoes and set aside. Drain grease.
- Add gnocchi to the skillet to lightly brown and crisp (only for a minute or two) then add the pesto sauce and stir the gnocchi to coat well. Gently add the tomatoes to heat and then transfer gnocchi and tomatoes into serving bowls. Top each bowl with crumbled bacon and feta, and garnish with fresh basil. Sprinkle kosher salt and pepper and serve!
