This cake is definitely a winner in our house. We all love banana bread and this is basically banana bread, in cake form, but extra moist, with a layer of buttercream frosting. I think that is enough said. đŸ˜€ But really, it’s a quick and easy dessert to make for any occasion, and is big enough to serve a small crowd. Perfect for serve as dessert at any summer get-together or BBQ, and an excellent choice as a late-night snack. Enjoy!
Banana Chocolate Chip Cake

4 cups flour
2 tsp baking soda
1 tsp salt
2 eggs
2 1/2 cups granulated sugar
1 cup butter, melted
1/4 cup vegetable oil
Approx. 6 Tablespoons milk
1 1/2 tsp vanilla extract
5 ripe bananas, mashed
1 1/2 cups mini chocolate chips
1/2 cup butter, softened
2 cups powdered sugar
1/2 tsp vanilla extract
a few teaspoons of milk, as necessary
Directions
- Preheat oven to 325 degrees. Generously butter or spray 9X13 baking dish, or two loaf pans, set aside.
- In stand mixer using paddle attachment, mix together the eggs, sugar, butter and oil.
- Add the flour, baking soda and salt and mix until just moistened
- In separate bowl, mash the bananas and then scoop them into the mixer with the other ingredients. Add milk and vanilla and mix on low just until everything is combined. Fold in the chocolate chips.
- Pour mixture into prepared baking pan, and bake in over for 45-60 minutes (depending on your oven) Check in 10 minute intervals after 40 minutes to see if a knife inserted near center comes out clean. Remove from oven and cool
- In large bowl, beat the softened butter and powdered sugar until pale and fluffy. Add vanilla, and just enough milk to give the frosting the desired consistency.
- Spread the frosting over the cooled cake and serve. Enjoy!
