Here is a quick and delicious idea for dinner tonight. This dish is super versatile so if you don’t have pears on hand you can use apples, or just add extra veggies. I love the combo of balsamic vinegar and brown sugar, it is just so good. It’s even better on pork chops, which, for whatever reason are not the most popular thing in my house. This recipe though, makes the pork chops impossible to resist, even for my picky eaters. You don’t even really have to let it sit and marinate if you are in a rush, just throw it all in the skillet and it’s done in 15 minutes. I would serve with a side of rice or potatoes, or a crunchy summer salad. Enjoy!
Balsamic Brown Sugar Pork Chops with Pear and Onion

4 3/4-inch thick boneless pork chops
1/4 cup balsamic vinegar
1/2 cup brown sugar
2 Tbsp soy sauce
1 Tbsp corn starch
pinch of salt and pepper
1/2 red onion, sliced
2 pears, peeled, cored and sliced into wedges
handful of fresh baby spinach
Directions
- In a medium bowl, mix together the vinegar, brown sugar, soy sauce, corn starch and salt and pepper. Add a little water if the consistency is too thick. Pour mixture over pork chops and seal in a bowl to marinate for at least an hour.
- Heat skillet to med-high heat and add a tablespoon of olive oil. Place the chops inside the skillet and cook 5-7 minutes per side, or until cooked through. Upon flipping pork chops, add the onion and pear and allow to cook until soft. Toss in the baby spinach. Serve immediately. Enjoy!
