This is what I mean when I say I use my naan bread for everything, hah! It makes awesome personal pizza crust. So, this super easy and refreshing lunch inspiration was created from a few simple ingredients from my fridge. Such a light and delicious idea to make any time of day, or even serve alongside soup for dinner. Enjoy. 🙂
Apple and Goat Cheese Flatbread
Ingredients
- 2 naan bread, flatbread or pita (your choice)
- A handful of fresh arugula or spinach, chopped
- 1/2 an apple, cut into thin slices
- 2 oz goat cheese brie
- 1/4 cup walnuts, crushed
- olive oil, for drizzling
- kosher salt and fresh ground pepper
Directions
- Heat oven to 400 degrees F. Place your naan on a parchment-lined baking tray.
- Top with arugula or spinach, apple slices, cheese and walnuts. Bake for 10 minutes.
- Top with additional chopped spinach, a drizzle of olive oil and a sprinkle of kosher salt and pepper. Enjoy!!
